Lake Biel wine soup

Discover our delicious Lake Biel wine soup, an authentic recipe that will tickle your taste buds with its unique regional flavours.


  • 1 tbsp butter
  • 1 pressed garlic clove
  • thyme
  • 3 sprigs rosemary
  • 3 dl Lake Biel white wine (e.g. Chasselas)
  • 6 dl vegetable stock
  • 2 fresh eggs
  • 1.5 dl cream
  • A sprinkling of chives to garnish
  • salt and pepper


  1. Melt the butter in a pan.
  2. Add the garlic, thyme and rosemary, deglaze with the Lake Biel wine and add the stock.
  3. Bring everything to the boil, reduce the heat and simmer for 5 minutes, then drain through a sieve.
  4. Beat the eggs and cream in a bowl until well combined.
  5. Add about 1 dl of the hot soup, stirring constantly.
  6. Slowly pour the egg/soup mixture back into the saucepan, while stirring continuously.
  7. Heat the soup, but do not allow it to boil.
  8. Season with salt and pepper, lightly whisk to emulsify, serve the soup and garnish with chives.
