A taste of Jura & Three-Lakes on your plate: this Damassine parfait brings the unique flavours of our region straight to you. Let yourself be tempted by this refined dessert – a delicious way to savour the spirit of our little paradise.
INGREDIENTS
Serves 4 | Moulds of approx. 2 dl each- 40 g dried plums (pitted, diced)
- 3 tbsp Damassine (plum brandy)
- 80 g meringue shells
- 200 g mascarpone
- 1.8 dl half cream, chilled in the freezer for 20 min, then whipped
PREPARATION
Preparation: 25 min | Resting time: 4 hours- Marinate the diced plums in Damassine for 3–4 hours or overnight.
- Place the meringues in a plastic bag and crush them using a rolling pin. Mix with the mascarpone. Add the marinated plums and gently fold in the whipped cream.
- Pour the mixture into moulds and freeze for 3–4 hours.
- Take the parfaits out of the freezer 10–15 minutes before serving.
- Briefly dip the moulds in hot water and turn out onto dessert plates. Drizzle with a few drops of Damassine and decorate as desired.
