Recipe: Damassine Parfait

Parfait à la Damassine

A taste of Jura & Three-Lakes on your plate: this Damassine parfait brings the unique flavours of our region straight to you. Let yourself be tempted by this refined dessert – a delicious way to savour the spirit of our little paradise.

INGREDIENTS 

Serves 4 | Moulds of approx. 2 dl each
  • 40 g dried plums (pitted, diced)
  • 3 tbsp Damassine (plum brandy)
  • 80 g meringue shells
  • 200 g mascarpone
  • 1.8 dl half cream, chilled in the freezer for 20 min, then whipped

PREPARATION

Preparation: 25 min | Resting time: 4 hours
  1. Marinate the diced plums in Damassine for 3–4 hours or overnight.
  2. Place the meringues in a plastic bag and crush them using a rolling pin. Mix with the mascarpone. Add the marinated plums and gently fold in the whipped cream.
  3. Pour the mixture into moulds and freeze for 3–4 hours.
  4. Take the parfaits out of the freezer 10–15 minutes before serving.
  5. Briefly dip the moulds in hot water and turn out onto dessert plates. Drizzle with a few drops of Damassine and decorate as desired.
