Sweet and sour courgettes
This recipe for sweet and sour courgettes enhances the Seeland vegetables. With its simple preparation and balanced taste, it will add a touch of sweetness to your dishes.


  • 2 kg Courgettes
  • 3 Peppers
  • 2-3 Large onions
  • 5 dl Water
  • 5 dl Vinegar
  • 1 tbsp Sugar
  • 1 tbsp Mild curry
  • (Pepper)


Day 1

  1. Cut the courgettes in half and then into 0.5 cm thick slices/pieces.
  2. Remove the seeds from the peppers and cut them into 0.5 cm strips.
  3. Peel the onions, cut them in half, and slice thinly.
  4. Place all the vegetables in a container. Add 2-3 tablespoons of salt and mix well.
  5. Refrigerate overnight and let marinate.

Day 2

  1. Pour the water, vinegar, sugar, pepper, and curry into a large saucepan.
  2. While the liquid is boiling, rinse the vegetables well with cold water and drain.
  3. Cook the vegetables in the broth for 2 minutes.
  4. Remove the vegetables from the broth and place them into preheated jars.
  5. Fill with the hot broth and close immediately.
